the blizzard upon us...

it starting snowing here in the charlotte area LONG after i went to sleep. snow where i live is a rare occurence and cause for panic attacks at walmarts and grocery stores everywhere!!!.... this was evident when i stopped at food lion with the girls on the way home from work. there was a cashier at each and every line. each register had 8-10 people waiting to check out. THERE WAS NO MILK. THERE WERE NO EGGS. it is laughable how we act in the south when there's even a THREAT of a flurry. this was around 4:30 yesterday afternoon.

so, when we woke up this morning, there now sits about 3/4 of ONE INCH of snow. and the world is pretty much shut down. our school system had only a 2 hour delay, but everything else around us is closed today. it's pouring down rain and the snow is melting. maybe it will freeze; who knows? the girls couldn't believe that there was snow, and then they were so disappointed to learn that they couldn't build a snowman. i told them we'd have to gather up all the snow in monroe to build a snowman and georgia says: "okay. i'll go get a bucket."

as i'm sitting at my desk at work, my boss calls me on my cell phone to tell me it's okay if i stay home this morning, to just come in around lunchtime. THANKS A LOT. i'm lonely in this big building all by my lonesome!

i guess i can cruise around the internet now, searching for something to make for dinner that doesn't involve frozen potatoes of some sort or spaghetti-o's. i'll take any suggestions!!! i fact, i am in need of some easy weeknight supper ideas. send them my way!!! just remember my stance on anything with mushrooms-- keep it to yourself!

I had to laugh at your description of panic and everythign shutting down. I live in Ottawa Canada and it gets COLD and SNOWY here. My in-laws live in a warmer/hardly any snow climate across the country in BC. Well, when they get snow the town declares a national emergancy half the time!!!

Hmmmm a good quick family meal...we do lots of stir fries and salads - oh - On Monday I made my famous brocholi and cheese dish...easy peasy!

1 can of cream soup (I use cream of brocholi or yes, gasp, mushroom!)
the suggested milk/water needed
1 head of brocholi cut up
2-3 chicken breasts cooked and diced up
1/2 cup of shredded cheese
mix it all up in a cassarole dish - I sprinckle with bread crumbs and parmasan cheese - back for 30 minutes. YUMMY and kids like it!

I will have to think of some easy ones and get back to you.

You can come up here and visit anytime you want during the snow or otherwise. We'd have a great time, so much to do.

We barely notice when the snow comes, we have to be falling down in order for things to close. I miss that about NC, I've been at work in a few inches of snow all day.

We had some snow too!! John and Owen were very sad they couldn't make a snowman. You are lucky you got a 2 hour delay....we got nothing. I don't know who was more disappointed me or the kids. I think we have another chance this weekend. If Bill gets stuck in DC he will be hurt (due home this evening).

Okay, bear with me this really is good....The basic recipe is a can of cream of chicken soup, a large can of cooked chicken, a can of veg-all salt, pepper and poultry seasoning mix gently and put into a pie crust from the frozen section.
I hardly ever make it this way though. Even though it is good if you do. I usually use leftover chicken cut up (even store bought rotisserie) and frozen and fresh vegetables-- carrots, celery, lima beans, peas--whatever you and the girls like. If you already have a pie plate, you can use the crust from the refrigerator section. The only can I usually use is the cream soup. Bake for 45 min or so at 350.
good luck. I am going to keep checking to see other people's ideas. It is hard to get supper on the table after working a full day!
